You can use your freezer to speed up the time it takes to get your hands on some delicious cheesecake!

No Bake Cheesecake

Difficulty :- Beginner

Total Time :- 1 hour 10 minutes (Freezer) 20 minutes

Serves :- 12

Ingredients

  • Plain Digestive biscuits ~ 200g
  • Butter ~ 85g
  • Vanilla extract / beans ~ 1.5 tsp
  • Soft cheese ~ 400g
  • Icing sugar ~ 100g
  • Double cream ~ 240ml
      Method
        • 1. In a large bowl crush your digestives into a bowl. You can use your hands, a rolling pin or a food processor.
        • 2. Pour in your butter and mix together. The crumbs should hold their shape when pressure is applied. 
        • 3. Transfer to a round tin with a removable base and flatten using your hands or a spoon.
        • 4. Place into the freezer for 10 minutes while we work on the cheesecake topping.
        • 5. Sieve your icing sugar into a mixing bowl, add cream cheese and whisk until combined.
        • 6. Whisk in your vanilla, pour in your cream. (I highly recommend using an electric whisk) and whisk until the topping is light, fluffy and holds it's shape.
        • 7. Pour onto your biscuit base and begin to spread out, ensuring all nooks and crannies have been filled.
        • 8. Place in the freezer for 1 hour to set and that's all there is to it! Once it has set you can serve straight away or place in the fridge until needed.
