No Bake Cheesecake

Total Time :- 1 hour 10 minutes (Freezer) 20 minutes

Ingredients
- Plain Digestive biscuits ~ 200g
- Butter ~ 85g
- Vanilla extract / beans ~ 1.5 tsp
- Soft cheese ~ 400g
- Icing sugar ~ 100g
- Double cream ~ 240ml
Method
- 1. In a large bowl crush your digestives into a bowl. You can use your hands, a rolling pin or a food processor.
- 2. Pour in your butter and mix together. The crumbs should hold their shape when pressure is applied.
- 3. Transfer to a round tin with a removable base and flatten using your hands or a spoon.
- 4. Place into the freezer for 10 minutes while we work on the cheesecake topping.
- 5. Sieve your icing sugar into a mixing bowl, add cream cheese and whisk until combined.
- 6. Whisk in your vanilla, pour in your cream. (I highly recommend using an electric whisk) and whisk until the topping is light, fluffy and holds it's shape.
- 7. Pour onto your biscuit base and begin to spread out, ensuring all nooks and crannies have been filled.
- 8. Place in the freezer for 1 hour to set and that's all there is to it! Once it has set you can serve straight away or place in the fridge until needed.
