Pancakes

Makes :- 6 Pancakes
Ingredients
- Flour ~ 135g
- Baking Powder ~ 1tsp
- Sugar ~ 3tbsp
- Milk ~ 150ml
- Vanilla extract ~ 1 tsp
- Egg ~ 1 medium
- Melted butter / unflavoured oil ~ 2tbsp
- salt ~ 1/2tsp
Method
- Add your flour and baking powder to a sieve and sieve together into a mixing bowl
- To the bowl add your salt and sugar and whisk to ensure all ingredients are incorporated
- Meanwhile to a jug add your milk, egg, vanilla extract and oil / butter and beat with a fork
- Now pour the mix from the jug to the mixing bowl and whisk until you have a smooth batter
- I like to leave my batter to rest for at least 5-10 minutes to help relax the gluten in the pancakes
- While my batter is resting I will preheat a pan on medium heat and once to temperature, add a knob of butter and ladle in your batter (You may need to do 2 batches of 3 depending on the size of your pan)
- Once the pancakes look like they have a "dry" outside and small bubbles are forming on the top, flip your pancake and cook for 1-2 minutes until the other side has browned
- If you are doing more than one batch, place the pancakes on an oven safe plate and place in a preheated oven at 70c this will help keep the pancakes warm while you cook the rest
- Serve with a small knob of butter a drizzle of maple syrup
