American pancakes are one of my favourite go-to breakfasts. They are fantastic to surprise the wife in bed or if you just feel like treating yourself. I recommend adding blueberries to the batter, just coat the blueberries in flour before you do so and this will prevent them from sinking to the bottom of the batter early on. 3 pancakes is more than enough to take you past lunchtime as they are very filling.

Pancakes

Difficulty :- Beginner

Total Time :- 20 minutes

Makes :- 6 Pancakes

Ingredients
  • Flour ~ 135g
  • Baking Powder ~ 1tsp
  • Sugar ~ 3tbsp
  • Milk ~ 150ml
  • Vanilla extract ~ 1 tsp
  • Egg ~ 1 medium
  • Melted butter / unflavoured oil ~ 2tbsp
  • salt ~ 1/2tsp
    Method
    1. Add your flour and baking powder to a sieve and sieve together into a mixing bowl
    2. To the bowl add your salt and sugar and whisk to ensure all ingredients are incorporated
    3. Meanwhile to a jug add your milk, egg, vanilla extract and oil / butter and beat with a fork
    4. Now pour the mix from the jug to the mixing bowl and whisk until you have a smooth batter
    5. I like to leave my batter to rest for at least 5-10 minutes to help relax the gluten in the pancakes
    6. While my batter is resting I will preheat a pan on medium heat and once to temperature, add a knob of butter and ladle in your batter (You may need to do 2 batches of 3 depending on the size of your pan)
    7. Once the pancakes look like they have a "dry" outside and small bubbles are forming on the top, flip your pancake and cook for 1-2 minutes until the other side has browned
    8. If you are doing more than one batch, place the pancakes on an oven safe plate and place in a preheated oven at 70c this will help keep the pancakes warm while you cook the rest
    9. Serve with a small knob of butter a drizzle of maple syrup
