Sponge Pudding

Makes :- 2 Puddings
Ingredients
- Butter ~ 50g
- Sugar ~ 50g
- Self raising flour ~ 50g
- Egg ~ 1 medium
- Vanilla extract ~ 1 tsp
- Salt ~ 1/2 tsp (If using unsalted butter)
- Any flavourings ~ Jam, nutella, maple syrup
Method
- Cream your butter in a mixing bowl until light and fluffy
- Add your sugar and cream together
- Add your egg and mix until smooth
- Add your vanilla extract and salt and mix in
- Sieve your flour into the bowl and gently fold until you have a batter. Don't overwork it or you will get a dense sponge.
- I'm making syrup sponges so I poured enough syrup to cover the bottom of the pudding cup and then spooned my batter into the pudding cups. Fill them up about halfway as they will rise when cooked
- Place in the microwave and cook for 55 seconds. Keep watching them just in case it overflows the sides
- Allow to cool for 2 minutes (This will help the pudding pull away from the sides and not stick)
- Transfer to a plate like you would build a sandcastle, give it a few taps and it should pop out
- Serve with more syrup or custard
