Rich chocolate chip muffins are a great party pleaser and are quick and easy to whip up in a pinch.
Double Chocolate Chip Muffins

Makes :- 12 Muffins
Ingredients

- Self Raising Flour - 2 1/4 Cups
- Cocoa Powder - 1/2 Cup
- White Sugar - 1 Cup
- Chocolate Chips - 3/4 Cup
- Milk - 2/3 Cup
- Eggs - 2 Medium
- Vanilla Extract - 1 Tsp
- Oil - 1/2 Cup
Method
- 1. Start out by measuring out your dry ingredients except the chips into a large mixing bowl and mix until combined. Make a well and set aside while you prep the wet
- 2. In a measuring jug add all of your wet ingredients and give a quick whisk with a fork until well combined.
- 3. Preheat your oven to 180C(350F)
- 4. Pour the wet mix into the dry and give a quick mix before adding your chocolate chips
- 5. Once you have added your chocolate chips mix until there is no sign of flour
- 6. If the batter is still a little too dry feel free to add a splash of milk to help it come together.
- 7. Line a muffin tray with cases and place around 2tbsp of mix into each case
- 8. Place in the preheated oven for 20-25 minutes. When doing the skewer test just bear in mind any chocolate left on the skewer could be metled chocolate chips
- 9. Leave to cool in the tray for 5 minutes before allowing to cool on a wire rack
