Banana & chocolate go very well together and this muffin recipe is filled to the brim with flavour!
Banana & Chocolate Chip Muffins
Difficulty :- Beginner
Total Time :- 40 minutes
Makes :- 10 Muffins
Ingredients
- Plain Flour ~ 2 Cups
- Extra Ripe Bananas ~ 3
- Baking Powder ~ 1Tsp
- Vegetable Oil ~ 1/2 Cup
- White Sugar ~ 1 Cup
- Chocolate Chips ~ 1/2 Cup
- Egg ~ 1 medium
Method
- 1. In a small bowl add your ripe bananas and mash with a fork until liquefied.
- 2.Put the bananas aside and in a large mixing bowl, sieve your flour and baking powder together. Add your sugar and mix
- 3. Add your oil & egg and mix to form a crumbly dough that won't come together.
- 4. Add your bananas and mix until all the flour is mixed in and your crumbly dough has turned to a thick batter.
- 5. Pour in your chocolate chips and mix through.
- 6. Line a muffin tray with cases and spoon the mix into 10 cases. This mix will make exactly 10 muffins so don't think you're overfilling the cases.
- 7. Place into a preheated oven for 25 minutes at 195C(380F) - 175C(350F) Fan
- 8. Take out the oven and leave to cool on a wire rack whilst in the tray. I recommend leaving the muffins to cool completely before eating because it will hold it shape much better when peeling the muffin case, the flavour also intensifies when cool.
