I probably made cookies 10 times before finally figuring out the way to achieve my favourite kind. A crunchy edge and bottom while keeping a soft chewy centre... I have finally figured it out and it's time to share!

Chocolate Chip Cookies

Difficulty :- Intermediate

Total Time :- 1 hour 30 minutes

Makes :- 12 Cookies

Ingredients
  • Flour ~ 1 Cup
  • Light Brown Sugar ~ 1/2 Cup
  • White Sugar ~ 1/2 Cup
  • Butter ~ 113g
  • Soda Bicarbonate ~ 1/4 tsp
  • Egg ~ 1 medium
  • Chocolate Chips ~ 1/2 cup
  • Vanilla Extract ~ 1 tsp
    Method
      • 1.Cream your butter in a large mixing bowl (This step is much easier if your butter is room temp)
      • Once your butter is light and pliable, add all your sugar and mix to get a paste like consistency
      • Now add your egg and mix to get a smooth batter
      • Pour in your vanilla and chocolate chips and give it a good mix
      • Now mix your flour and soda together and sieve into the mixing bowl
      • Gently mix (I mainly fold my flour in) Stop as soon as your flour is mixed in to ensure you don't overwork the flour.
      • Now wrap your cookie dough in some cling film and cool in the fridge for around 1 hour
      • Place some parchment paper on a cookie sheet and preheat your oven to 175C/350F Don't use fan, instead use the oven setting
      • Now measure out your cookie dough into 2 Tbsp balls (Just use a regular measuring spoon to measure out the amount of dough)
      • Place on the cookie sheet and cook for roughly 13 minutes. The edge of the cookies will be a delicious golden brown
      • Leave to cool on the tray for 5 minutes before eati- placing on a wire rack to cool... completely
