Liege waffles are the sweeter cousin of the Belgian waffle yet they taste equally if not more delicious! These are perfect all year round as a sweet indulgent dessert. These waffles use an ingredient that's not all that common, however you can make it with just regular caster sugar! How to make pearl sugar.

Depending on how sweet you like your waffles, these are best served with just a simple scoop of vanilla ice-cream. If you have a sweet tooth craving for attention you can also smother it in a chocolate fudge sauce.



Liege Waffles

Makes :- 6 Waffles

Ingredients
  • Pearl sugar ~ 1 Cup
  • All purpose flour ~ 2 Cups
  • Dry active yeast ~ 1 Tsp
  • Sugar ~ 1½ Tbsp
  • Salt ~ Pinch
  • Butter ~ 1 Cup
  • Eggs ~ 3 medium
  • Warm water ~ ⅓ Cup
Method
  1. Add your yeast to a metal bowl and add your sugar and water. Let the yeast water sit for a few minutes until you start to see foam. This ensures your yeast is active and ready to go.
  2. Now that your yeast has started to foam, ass all of your flour and salt, give it a quick mix just to ensure most of the flour is coated in the yeast water.
  3. Not take ⅓ of your butter and 1 egg and add it to the mix. Mix the butter and eggs into the flour by using the same method you would use to make a crumble...just it's wet... and doesn't feel like it will come together.
  4. Repeat until all of your butter and eggs have been used.
  5. Once you have a nice this batter, cover and let it rise in a warm, draft free area for around an hour until doubled in size.
  6. If you haven't yet, make your pearl sugar now because it's about to be used. After your batter has doubled in size pour in your pearl sugar and gently fold the sugar into the batter, minimizing the amount of air you squeeze out in the process.
  7. Folded in? Good, now start preheating your waffle iron. I have made waffles numerous times before so I know what setting my waffle iron cooks best (Which is around medium heat) Once preheated, pour a small ladle of the batter in the middle and press down! The batter is so thick it may need a little extra push on top of your waffle iron in order to close it properly.
  8.  My waffle iron takes around 5 minutes to cook a waffle but don't be scared to lift up the lid as the times will vary.
  9. Serve these waffles with just a simple scoop of ice-cream or you could add berries for a sweeter but not too sweet flavour to go along with the waffles.
